PIVOT Student Demonstrates Healthy, Affordable Options

Karen Ruiz-Cholula, a Medical Office Support student at PIVOT, used skills she developed in a Culinary Arts program to demonstrate how to eat healthy and affordable meals to her fellow students at PIVOT Job Corps Center.

Healthy Eating Active Lifestyles (HEALS) is a program that educates students on their food choices and gives them options for getting more out of their options. Karen volunteered to show a group of students how to create easy shopping lists that could be used to create healthy, inexpensive meals. “I like to cook,” she explained. “That’s why I originally tried out culinary arts. Even though I decided to go in a different direction for my career, I still enjoy cooking and trying to figure out how to make good food on a budget.”

Other PIVOT students signed up to see the demonstration and ask questions about ingredients and how to prepare them. “Part of what we’re teaching students at Job Corps is how to live independently,” Site Director Tyna Moreschi said. “Part of that is giving them ideas on how to cook at home, which is a lot less expensive in the long run and usually a lot healthier.”
